Grilled fish, cheese, pastaThis Xarel-lo from Clos Lentiscus is a beautiful example of zero sulfur winemaking from the Garraf Mountains in Catalunya. The vines are around 80 years old and lend a considerable amount of complexity and length to the wine. This wine is a prime example of very beautiful and stylish natural wines that will impress even the most discerning wine connoisseur. It has a high mineral content, complexity, and a long creamy-spicy aftertaste.
Winemaking: A still skin-macerated wine made from 100% Xarello, biodynamically grown on sandy chalk soils at an elevation of 220m - 310m. All hand harvested with 15 days whole cluster spontaneous fermentation with indigenous yeasts in 300-liter amphoras. Then it is pressed and the must returns to the same amphora for a 7-month aging. Bottled unfined, unfiltered, and zero SO2. Annual production 5,000-5,500 bottles
