Made from a blend of Fernão Pires + Arinto, most emblematic white grapes from Lisbon region. The grapes were harvested by hand in 20kg crates from a 3 hectare plot of unirrigated clay terroir vineyard located near Serra de Montejunto. The grapes are destemmed and then lightly crushed to start the spontaneous fermentation in an inox vat. The wine is unfined, unfiltered and with just a small quantity of sulfite added during this process. The grapes were harvested soon, just 11.5% alcohol so the wine can achieve its full acidity potential even with a little green on the nose.
